Herbs pack a nutritious punch, and this delicious recipe is really easy to make. No real culinary prowess needed! It works wonderfully as a dip, sauce, or spread.
Ingredients
- 2 cups fresh cilantro leaves, packed (can sub some basil too for a different flavor)
- ¼ cup walnuts or pine nuts
- 1 tbsp lime juice
- ¼ cup olive oil (you can use a bit more if needed)
- 1 clove garlic (or 2 if you really like garlic)
- 1 tsp salt
Instructions
- Put cilantro, walnuts, lime juice, garlic and salt in a food processor and pulse while pouring in olive oil from above. Continue to puree until pesto is smooth in consistency.
